We are excited to report that our 2005 Benziger Cabernet – Puma Springs Vineyards designated wine, is now sold out! The 2006 vintage will be available for sale in the spring of 2009. The 2006 vintage was bottled in the spring of 2008 and our initial tastings of the wine have us all very excited. The first barrel tasting of the 2006 vintage was conducted in February of 2007. The fermentation was done in 2 lots with a 3 day cold soak before fermentation using natural yeasts. One lot was a field blend of the Cabernet Sauvignon and Petit Verdot and the other was a field blend of several blocks of different clones of Cabernet Sauvignon. The final blend for bottling was a careful selection by winemaker Rodrigo Soto to bring out the complexities of the various clones and varietals. |
